Spring Salad


a cabbage
a sugar loaf head
a head of lettuce
a Granny Smith apple
Pecorino cheese (sheep’s milk cheese)
Salt, pepper, sugar, red chilli pepper
Apple vinegar
Extravergine olive oil


Clean and strain all the vegetables as well as the apple. Put the thinly cut cabbage into a bowl. Add the lettuce and the sugar loaf cut into slightly larger strips.
Add thin slices of pecorino together with apple cubes.
Now mix oil, apple vinegar, salt, pepper, sugar and red chilli in a bowl; pour the condiment over the salad and serve immediately.
